Farmer’s Breakfast

Alright, I’m now dipping my foot in the Breakfast section of the cookbook and the first dish will be the Farmer’s Breakfast 👩🏻‍🌾 from good ol’ La Noscea 🏝️ The difficulty is set to Easy so it shouldn’t be too bad.

As usual I had to go to the groceries in the morning to get the ingredients. Seriously, I only had one egg in the fridge 😅 What I haven’t had for the longest time was the kielbasa, mmmm 🤤 My portion is a little off (I have more kielbasa than bacon) but I think it should be fine. 

First on the list is to prepare the potatoes: peel, chop and season before roasting it in the oven 🥔🔪🧂🔥

Then prepare the other ingredients. The preparation is quite different with all the chopping 🔪 versus the measuring and mixing when it comes to baking 🥣

Now time to showcase my trustee ✨cast-iron skillet✨ that I haven’t used for the longest time so it’s nice to have this back in action. Cook the plentiful kielbasa 🥩 a bit of the bacon 🥓 then use the meat grease to glaze the onion 🧅

Once the onion is cooked, I stacked the roasted potatoes then added the meat into the mix. When it’s all combined, I distributed the egg evenly throughout the skillet. 

I covered it with a lid and continued to cook it in low heat for a couple of minutes. Using my cast-iron skillet makes me feel so fancy ✨👩🏻‍🍳✨

Shortly after, I removed the cover and placed the skillet under the broiler to set the top egg 🔥

And viola, we have the Farmer’s Breakfast 👩🏻‍🌾

Since the spice is very simple, there’s not much aroma from it. However, although it’s a little salty it doesn’t taste bad. I think it would go really well with a pancake or bread to balance out the salty flavor. I’m guessing the salt mostly came from the meats but I can’t complain about that because I love meat ❤️ Just not this salty though 😅

This was definitely easy to make but aside from the saltiness, the serving is huge considering it’s for two people. My boyfriend and I could only eat ¼ each. Shoot I couldn’t even finish ¼ of it 😅 It has 5 eggs in it and I can usually handle one egg a day. So I’ll be eating this throughout the week for lunch as a sandwich. Always improvising 😊
